I baked these yesterday for the first time. They were so easy to do and made beautiful, uniform and delicious cookies. Perfect for those cookie swaps or gifts. The house smelled so yummy too!
Yummy Soft Ginger Cookies
- 2 1/4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- pinch of all-spice
- 1/4 teaspoon salt
- 3/4 cup margarine, softened
- 1 cup white sugar
- 1 egg
- 1 tablespoon water or orange juice
- 1/4 cup molasses
- 1/4 cup white sugar reserved for rolling dough.
- Preheat oven to 350 degrees F. Sift together the flour, baking soda, salt and spices. Set aside.
- In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water, (or juice) and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the reserved sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly. (The dough is easier to handle if it is refrigerated for a while before rolling.)
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
I can still smell these from my childhood... such lovely memories! Hope you have a wonderful Christmas season.

ReplyDeleteHi Robin, thanks so much for that recipe, ginger cookies are my favorites, love the tang and simplicity of them. Who knew the garden bloggers would be providing recipes for something besides potting mix? HA
ReplyDeleteFrances
These look absolutely wonderful! I've been thinking about what I want to bake this Christmas. So far, it's Figgy Pudding and Sugar Plums. I may have to add this recipe too!
ReplyDeleteRobin, thanks for stopping by my place and leaving such a lovely comment. You blessed me too!

ReplyDeleteSounds delicious - thanks for the recipe. I love trying new cookie recipes! Now if only I had time to try them all!
ReplyDeleteMmmm, I'm glad I saw this recipe, even though Christmas is over. We have several roots of fresh ginger root in the freezer (a tip by Zonya - www.zonya.com.) I have a fever and cold right now and just read that it knocks out a fever and is a natural decongestant, so I'm heading to the freezer right now.
ReplyDeleteI enjoyed your backyard birding photographs and am impressed with your home-made suet.
