Yummy Ginger Cookies



I baked these yesterday for the first time. They were so easy to do and made beautiful, uniform and delicious cookies. Perfect for those cookie swaps or gifts. The house smelled so yummy too!

Yummy Soft Ginger Cookies

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • pinch of all-spice
  • 1/4 teaspoon salt
  • 3/4 cup margarine, softened
  • 1 cup white sugar
  • 1 egg
  • 1 tablespoon water or orange juice
  • 1/4 cup molasses
  • 1/4 cup white sugar reserved for rolling dough.
DIRECTIONS
  1. Preheat oven to 350 degrees F. Sift together the flour, baking soda, salt and spices. Set aside.
  2. In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water, (or juice) and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the reserved sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly. (The dough is easier to handle if it is refrigerated for a while before rolling.)
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

  19. Mmmm, I'm glad I saw this recipe, even though Christmas is over. We have several roots of fresh ginger root in the freezer (a tip by Zonya - www.zonya.com.) I have a fever and cold right now and just read that it knocks out a fever and is a natural decongestant, so I'm heading to the freezer right now.

    I enjoyed your backyard birding photographs and am impressed with your home-made suet.
