I have a delicious recipe for salsa that taste so much like the kind that I get at my favorite Mexican restaurant. Everyone that tastes it loves it. I crave it and can eat it by the spoonful without chips.
Restaurant Style Salsa
2 cans stewed tomatoes (This is the trick to get the right consistency, don't substitute)
1 or 2 limes, juiced
1 lemon, juiced
1 small onion, chopped
cilantro, to taste
salt, to taste
cumin (a few dashes)
Blend above ingredients with a stick blender or in a stand blender, (not too long or it will be foamy) .
After the above ingredients are well blended add 2-3 cans of Rotel tomatoes, (I use the Rotel with lime and cilantro)
Variations:
add a couple cloves fresh garlic
fresh jalapeno
remove seeds and add fresh chopped tomatoes
Robin, this looks great. I've not heard of Rotel tomatoes so will do some research. So, you use 2 cans of stewed tomatoes, as well as the Rotel? I need to try this!
ReplyDeleteBev, Rotel is a brand of tomatoes and jalapeno peppers, you could use any brand. You do use both kinds of tomatoes the trick is to blend the stewed tomatoes first and then add the Rotel. Doing it this way makes a perfect salsa consistency.

ReplyDeleteWow I have tried half a dozen recipes for authentic mexican style salsa and nothing came close to what I got at the good restaurants. I decided to try yours and it is absolutely delicious. The rotel tomatoes with lime and cilantro really add the kick to make it spicy. I also added half a medium white onion finely chopped and about 1/4th cup of fresh cilatro to give it a little more spice and I am in love with this salsa! Your recipe makes quite a large amount and after one day half of it is already gone and there are only 2 of us here! Thanks so much for sharing your recipe!

I added my own little tweeks, and I also used some fresh tomatoes and minced garlic as you suggested at the end, I added it all, I would really recommend 1/1/2 lime 1/2 lemon though. GREAT recipe I love this and thank you so much for sharing.

I put 2 cans (14.5 oz) of stewed tomatoes, about half a bunch of cilantro leaves, juice of 2 limes, 1 medium chopped onion, a dash of sea salt and a couple of dashes of cumin. I blended this together with an immersion blender (boat motor). I then added 3 cans of Rotel with lime and cilantro and 1 can of Rotel with habanero. Wow! this came out perfect! Best recipe I've found anywhere. The Rotel with habanero has just enough heat. This does make a lot but it won't last, it's so good. Next time I might try adding some minced garlic. Thanks for this great recipe!!
